Easy Creamy Overnight Oats Parfaits

 

A jar of overnight oats is an excellent idea for a delicious and nutritious breakfast!

Oats are rich in fiber, protein, and antioxidants, and they contain several vitamins and minerals that promote a happy and healthy gut.❤️

And also, overnight oats are super easy to make, and preparing breakfast in a jar will take you less than 10 mins! Prepare it at the evening and enjoy your healthy breakfast next day!☺️

Today we share two simple ideas for super creamy blended overnight oats parfaits, perfect for breakfast (or dessert!☺️)

Pink Pitaya & Raspberry Overnight oats Parfait

Pink Pitaya & Raspberry Blended  Overnight oats
Ingredients:
  • 1/2 cup rolled oats
  • 160 ml of cashew milk (or any other milk of choice)
  • 2 tbsp coconut cream
  • 3 tbsp maple syrup
  • 1 tsp of vanilla extract
  • 1 tsp of pink pitaya powder
  • A handful of raspberries

For the pink whipped cream

  • 50-100 ml of plant based whipped cream
  • 1/2 tsp pitaya 
  • 1 tbsp powdered sugar (optional)

Directions:

  1. Place all ingredients in a blender and blend until smooth. Pour into a jar or glass, cover, and put in the fridge overnight.
  2. When ready to eat, add whipped cream and fresh raspberries on the top (or your toppings of choice)


Green Matcha & Lime Overnight oats parfait

Green Matcha & Lime Overnight oats parfait
Ingredients:
  • 1/2 cup rolled oats
  • 160 ml of cashew milk (or any other milk of choice)
  • 2 tbsp coconut cream
  • 3 tbsp maple syrup
  • 1/4 tsp of vanilla extract
  • 1/2 tsp of cardamom
  • 3 tbsp of lime juice
  • 1 tsp of matcha powder + 1/4 tsp of Blue spirulina

For the green whipped cream:
  • 50-100 ml of plant based whipped cream
  • 1/2 tsp pitaya 
  • 1 tbsp powdered sugar (optional)

Directions:
  1. Place all ingredients in a blender and blend until smooth. Pour into a jar or glass, cover, and put in the fridge overnight.
  2. When ready to eat, add whipped cream and add whipped cream and a slice of lime on the top (or your toppings of choice).

 

We created light shades of pink and green, but if you would to make your overnight oats in strongest colors, add more powders.

You can of course also change the recipe according to your needs, add different flavors and add other superfood powders / colors 👇
